Hello there, I’m Dixie!

With over almost 15 years of experience as a Chef + over 20 years experience in the food biz I have picked up knowledge from all aspects of the industry. Food has been an integral part of my life right from the word go as my family ran small deli, called now called Fingal-Rock, of which was the centre point of our lives as we lived in the flat above. This is where my passion was born. I have been cooking and experimenting with ingredients independently from as little as 5 years old (not my greatest culinary creations but you have to start somewhere, right?), and continue to be completely head over heels for the infinitely captivating and satisfying subject that is food. It is in my bones and I love it.

I am a seriously passionate cook. I thrive on creating new recipes and I work well with a brief when creating new menus and recipes. I pride myself on having a deep knowledge of flavour and ingredients too.

What do I like to cook? I cook everything, but I do have a particular love affair with bread. I also love to pickle, ferment and preserve. I love making pastry and pies. Seasonal and exciting salads, dips, sharing dishes, loads of veg dishes. I cook mostly veg. Quick dishes and family meals. Drinks! Homemade cordials and funky fermented drinks.  I also like to cook with wild foraged food when I can and cook sustainably as possible. I am very resourceful and am always thinking of how to use ingredients to their fullest to produce as little waste as possible. I like comforting desserts and big puddings for a crowd. I like to explore the world via food. Dishes from all over the world. I am British and Caribbean so have this wealth of knowledge in my little black book of recipes as well as an extensive knowledge of Middle Eastern and Mediterranean food. I truly love and respect food from all over the world and spend much of my time exploring the globe (by way of the kitchen) through food.
